How Chef Maria Kardamaki Robertson Brings Authentic Flavor to the Mealogic Menu
Growing up on the Greek island of Crete, the founder of Demeter's Pantry, Maria Kardamaki Robertson, learned the art of Mediterranean cooking from her grandmothers, absorbing the traditions and authentic flavors that would later inspire her culinary venture. Today, Demeter's Pantry brings these authentic family recipes to a wider audience, focusing on fresh ingredients and traditional cooking methods. We recently caught up with Maria to discuss her culinary journey, her commitment to authenticity, and how her Cretan upbringing continues to influence her approach to food.
Why did you launch Demeter's Pantry?
I launched our prepared foods because I wanted to bring to market the Greek foods I grew up eating and cooking with my grandmothers. As the oldest girl in the family, I was responsible for helping out with the daily meals. I wanted people to experience these authentic home recipes. This became our mantra - to search and bring to market authentic family recipes from different parts of the Mediterranean, and later from Latin America. Who knows, maybe in the future we will add another cuisine.
Can you tell me more about how growing up on Crete influences your cuisine?
I was fortunate to grow up in the heart of the Mediterranean diet, where people shop daily for fresh ingredients and everything just tastes amazing. I learned to appreciate good food and to cook with fresh vegetables and herbs, as we do today at Demeter's Pantry.
How does Demeter's Pantry support local farmers and sustainable agriculture?
When possible, we source organic ingredients like our organic corn tortillas, and source local produce when in season. We use only fresh vegetables and herbs in our cooking.
Which meal of yours would you recommend to someone who's never tried your food?
It is hard to choose, but one of our all-time favorites is the Greek Chicken Bowl made with grilled chicken breast and topped with capers, feta cheese, red peppers, and our in-house Greek marinade. I never get tired of it.
